Taco Soup

  • 1 pound ground beef or turkey
  • 1 onion diced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 28 oz diced tomatoes
  • 1 packet taco seasoning
  • 4 cups beef or chicken broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese sour cream, diced avocado, sliced jalapeƱos, tortilla chips

  • In a large pot over medium heat, brown the ground beef or turkey with the diced onion until the meat is cooked through and the onion is softened. Drain any excess fat if necessary.
  • Add the black beans, kidney beans, corn, diced tomatoes, and taco seasoning to the pot. Stir to combine all the ingredients thoroughly.
  • Pour in the beef or chicken broth, and season with salt and pepper to taste. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20-30 minutes, allowing the flavors to meld.
  • Taste the soup and adjust seasoning if needed. Serve hot in bowls and let everyone customize their soup with their favorite toppings.

  • For an extra kick, consider adding diced jalapeƱos or a splash of hot sauce to your taco soup.
