  • In a large mixing bowl, combine the warm milk, melted butter, and sugar. Stir until the sugar is dissolved, then sprinkle the yeast over the mixture. Let it sit for about 5-10 minutes until foamy.
  • In a separate bowl, whisk together the flour, salt, and cinnamon (if using). Gradually add the dry ingredients to the yeast mixture, mixing until combined.
  • Add the eggs and vanilla extract to the mixture, and knead the dough on a floured surface for about 8-10 minutes until it becomes smooth and elastic. If the dough is too sticky, you can add a little more flour as needed.
  • Place the dough in a lightly greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours or until it has doubled in size.
  • Once the dough has risen, punch it down to release the air. If you're adding raisins or nuts, fold them into the dough at this stage.
  • Shape the dough into a loaf and place it in a greased loaf pan. Cover it again with the towel and let it rise for another 30-45 minutes until it has risen above the edges of the pan.
  • Preheat your oven to 350°F (175°C). Bake the sweet bread for 25-30 minutes or until golden brown and a toothpick inserted into the center comes out clean.
  • Remove from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  • When making sweet bread, it's important to keep an eye on the dough during the rising process. Temperature and humidity can affect how quickly it rises, so be patient and allow it to double in size fully.
