Instructions:
In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, rosemary, thyme, salt, and black pepper until well combined.
Place the chicken breasts in a large resealable plastic bag or shallow dish and pour the marinade over the chicken. Confirm that each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 8 hours for more flavor.
Preheat your grill to medium-high heat. Remove the chicken from the marinade and let any excess marinade drip off, discarding the leftover marinade.
Place the chicken on the grill and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through and has nice grill marks.
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing. Serve with lemon slices for garnish.
For the best results, consider marinating the chicken overnight to allow the flavors to penetrate deeper. Additionally, if you don't have a grill, you can also cook the chicken in a grill pan or bake it in the oven at 400°F (200°C) for about 20-25 minutes.
