Southwest Ground Beef Sweet Potato Skillet

  • 1 teaspoon cumin
  • 1 teaspoon paprika

  • Directions:
  • Heat a large skillet over medium heat and add a drizzle of olive oil. Once hot, add the diced sweet potatoes. Sauté for about 10-12 minutes, stirring occasionally, until they're tender and lightly browned. Remove the sweet potatoes from the skillet and set them aside.
  • In the same skillet, add the chopped onion and bell pepper. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and fully cooked through, about 5-7 minutes. Drain any excess fat if necessary.
  • Stir in the black beans, corn, chili powder, cumin, paprika, and the cooked sweet potatoes. Mix everything well and simmer for an additional 5 minutes until heated through. Season with salt and pepper to taste.
