  • - 2 salmon fillets
  • - 1 tablespoon olive oil
  • - 1 teaspoon Dijon mustard
  • - 1/2 cup fresh parsley chopped
  • - 1/4 cup fresh dill chopped
  • - 1 garlic clove minced
  • - Zest of 1 lemon
  • - Juice of 1 lemon
  • - Salt and pepper to taste
  • - Lemon wedges for serving

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly grease it with cooking spray or a drizzle of olive oil.
  • In a small bowl, combine olive oil, Dijon mustard, minced garlic, lemon zest, and lemon juice. Mix well until all ingredients are thoroughly blended.
  • In another bowl, mix together the chopped parsley, dill, salt, and pepper. This will be your herb crust.
  • Place the salmon fillets skin-side down on the prepared baking sheet. Brush the olive oil and mustard mixture evenly over the top of each fillet.
  • Press the herb mixture onto the salmon fillets, making sure to cover the top entirely.
  • Bake in the preheated oven for about 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Remove from the oven and let it rest for a couple of minutes before serving. Garnish with lemon wedges.
  • Extra Tips:
  • When cooking salmon, it's important not to overcook it, as it can become dry. Aim for an internal temperature of about 145°F (63°C) for perfectly cooked salmon.
  • For added flavor, consider marinating the salmon in the mustard and lemon mixture for 30 minutes before applying the herb crust. This will enhance the taste and make your dish even more aromatic. Enjoy your meal!
