Instructions:
In a large pot or skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
Then, add the minced garlic and cook for an additional minute until fragrant.
Add the ground beef or sausage to the pot, breaking it apart with a wooden spoon. Cook until browned, about 7-10 minutes. Drain excess fat if necessary.
Stir in the crushed tomatoes, tomato sauce, and tomato paste. Mix well to combine all ingredients.
Add the sugar, Italian seasoning, oregano, thyme, bay leaf, salt, and pepper. Stir to incorporate the spices evenly throughout the sauce.
Bring the sauce to a gentle simmer, then reduce the heat to low. Cover the pot and let it simmer for 30-50 minutes, stirring occasionally. This will allow the flavors to meld and the sauce to thicken.
Taste the sauce and adjust the seasoning if needed. Remove the bay leaf before serving.
Serve the sauce over your favorite pasta and garnish with fresh basil or parsley if desired.
