  • In a medium saucepan, combine 1 cup of pumpkin puree, 1 cup of granulated sugar, 1/2 cup of brown sugar, and 1 cup of water over medium heat.
  • Whisk the mixture thoroughly until the sugars are completely dissolved, guaranteeing there are no lumps.
  • Add in 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground nutmeg, 1/2 teaspoon of ground ginger, 1/2 teaspoon of ground allspice, and 1/4 teaspoon of ground cloves. Stir well to incorporate the spices.
  • Allow the mixture to come to a gentle simmer. Let it simmer for about 10-15 minutes, stirring occasionally, until it thickens slightly.
  • Remove the saucepan from heat and stir in 1 teaspoon of vanilla extract. Let the syrup cool to room temperature.
  • Once cooled, strain the syrup through a fine mesh strainer into an air-tight container to guarantee a smooth texture. Discard any solids left in the strainer.
  • Store the syrup in the refrigerator for up to 1-3 weeks or freeze it for longer storage.
