Hearty Crock Pot Cowboy Soup

  • - Salt and pepper to taste
  • - Optional: shredded cheese hot sauce, sour cream, chopped green onions for serving

  • In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat and transfer the beef to the crockpot.
  • Add the chopped onions, minced garlic, mixed vegetables, diced potatoes, and corn to the crockpot with the browned beef.
  • Pour in the beef broth and canned tomatoes, then add the drained beans. Stir everything together to combine.
  • Season the mixture with chili powder, cumin, paprika, salt, and pepper. Adjust the spices to your taste.
  • Cover the crockpot and cook on low for 2-3 hours or high for 1-2 hours until the vegetables are tender and the flavors meld. Notably, leftovers improve in flavor the next day, making this COWBOY SOUP an excellent choice for meal prep.
