Garlic Miso Chicken

  • 4 chicken thighs bone-in, skin-on
  • 4 tablespoons white miso paste
  • 4 cloves garlic minced
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • Salt and pepper to taste
  • Chopped green onions for garnish

  • In a medium bowl, combine the white miso paste, minced garlic, soy sauce, honey, rice vinegar, sesame oil, grated ginger, salt, and pepper. Mix until well combined to create a marinade.
  • Place the chicken thighs in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, ideally overnight for maximum flavor.
  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easier cleanup.
  • Remove the chicken from the marinade, allowing any excess marinade to drip off. Arrange the chicken thighs on the prepared baking sheet, skin side up.
  • Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the skin is crispy and golden brown. You can use a meat thermometer to verify the internal temperature reaches 165°F (74°C).
  • Once cooked, remove the chicken from the oven and let it rest for about 5 minutes. Garnish with chopped green onions before serving.
  • Extra Tips:
  • For an added layer of flavor, consider searing the chicken skin-side down in a hot skillet for a few minutes before transferring it to the oven. This will create a beautiful crispy skin.
  • Additionally, you can customize the marinade by adding your favorite herbs or spices, such as chili flakes for a bit of heat. Serve the Garlic Miso Chicken with steamed broccoli or a fresh salad for a complete meal!
