In a medium bowl, combine the white miso paste, minced garlic, soy sauce, honey, rice vinegar, sesame oil, grated ginger, salt, and pepper. Mix until well combined to create a marinade.
Place the chicken thighs in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, ideally overnight for maximum flavor.
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easier cleanup.
Remove the chicken from the marinade, allowing any excess marinade to drip off. Arrange the chicken thighs on the prepared baking sheet, skin side up.
Bake in the preheated oven for 30-35 minutes, or until the chicken is cooked through and the skin is crispy and golden brown. You can use a meat thermometer to verify the internal temperature reaches 165°F (74°C).
Once cooked, remove the chicken from the oven and let it rest for about 5 minutes. Garnish with chopped green onions before serving.
