  • 8 oz dry pasta spaghetti or fettuccine
  • 1 cup ricotta cheese
  • Zest of 1 lemon
  • 2 tbsp lemon juice
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish
  • Olive oil optional

  • Bring a large pot of salted water to a boil. Add the dry pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  • In a large mixing bowl, combine the ricotta cheese, lemon zest, and lemon juice. Mix well until smooth and creamy. If the mixture is too thick, add a bit of the reserved pasta water to reach your desired consistency.
  • Add the drained pasta to the ricotta mixture and toss to combine, making sure that the pasta is evenly coated with the sauce. Season with salt and pepper to taste.
  • If desired, drizzle a little olive oil over the pasta for added richness. Toss again to combine.
  • Serve the Lemon Ricotta Pasta in bowls, garnished with grated Parmesan cheese and fresh herbs like basil or parsley for a burst of flavor. Beef Stroganoff is another easy one pot meal option that can also serve as a comforting weeknight dinner.
  • For best results, verify that your pasta is freshly cooked and hot when mixed with the ricotta sauce, as this will help melt the cheese and integrate the flavors.
