  • In a separate bowl, whisk the egg yolks and granulated sugar together until the mixture becomes pale and creamy. Add the cooled chocolate-espresso mixture and the vanilla extract, and stir until well combined.
  • In another clean bowl, beat the egg whites with a pinch of salt until stiff peaks form. Gently fold the whipped egg whites into the chocolate mixture, being careful not to deflate the volume.
  • In a different bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until fully incorporated, creating a light and airy texture.
