  • In a bowl, combine soy sauce, mirin, sugar, sesame oil, minced garlic, and grated ginger. Whisk the ingredients together until the sugar is dissolved to create your teriyaki marinade.
  • Place the chicken pieces in a resealable plastic bag or a shallow dish, and pour the teriyaki marinade over the chicken. Seal the bag or cover the dish, then refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  • If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. Preheat your grill or grill pan to medium-high heat.
  • Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking. If desired, you can add vegetables such as bell peppers or onions for added flavor and color.
  • Grill the skewers for about 5-7 minutes on each side, or until the chicken is cooked through and has a nice char. If you want a thicker glaze, you can brush additional marinade on the skewers during the last few minutes of grilling.
