  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onions, carrots, and celery, and sauté for about 5 minutes until the vegetables begin to soften.
  • Stir in the minced garlic, dried thyme, dried rosemary, and a pinch of salt and pepper. Cook for an additional 1-2 minutes until fragrant.
  • Add the chicken thighs or drumsticks to the pot, browning them on all sides for about 5-7 minutes. This will enhance the flavor of the stew.
  • Pour in the chicken broth and add the bay leaves. Bring the mixture to a gentle boil, then reduce the heat to low and cover the pot. Let it simmer for 30-40 minutes, or until the chicken is cooked through and tender.
  • If you prefer a thicker stew, mix the cornstarch with a few tablespoons of water to create a slurry. Stir this mixture into the stew and simmer for an additional 5-10 minutes until thickened.
  • Remove the bay leaves, and taste the stew, adjusting the seasoning with more salt and pepper if needed. Serve hot, garnished with freshly chopped parsley.
