Chicken Scampi

Ingredients

  • Ingredients:
  • - 1 lb boneless skinless chicken breasts
  • - Salt and pepper to taste
  • - 2 tablespoons olive oil
  • - 4 tablespoons unsalted butter
  • - 4 cloves garlic minced
  • - 1/2 teaspoon red pepper flakes optional
  • - 1/2 cup chicken broth
  • - 1/2 cup dry white wine
  • - Juice of 1 lemon
  • - 1/4 cup fresh parsley chopped
  • - Cooked pasta or crusty bread for serving

Instructions

  • Cooking Instructions:
  • Begin by seasoning the chicken breasts with salt and pepper on both sides. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side, until they're golden brown and cooked through. Remove the chicken from the skillet and set aside.
  • In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and red pepper flakes, if using, stirring for about 1 minute until fragrant. Be careful not to let the garlic burn.
  • Pour in the chicken broth and white wine, scraping the bottom of the skillet to deglaze and incorporate any bits from the chicken. Bring the mixture to a simmer and let it cook for about 3-4 minutes to reduce slightly.
  • Squeeze in the lemon juice and return the cooked chicken to the skillet. Let the chicken simmer in the sauce for an additional 2-3 minutes, allowing it to absorb the flavors. Before serving, sprinkle with fresh parsley.
  • Serve the Chicken Scampi over cooked pasta or alongside a piece of crusty bread to soak up the delicious sauce.
  • For the best results when making Chicken Scampi, consider using fresh ingredients, particularly fresh garlic and parsley, which enhance the dish's overall flavor.
  • Additionally, be mindful not to overcook the chicken, as it can become dry. If you prefer a creamier sauce, you can stir in a splash of heavy cream at the end for richness. Enjoy your culinary creation!
