  • Begin by soaking the rice noodles in hot water for about 30 minutes or until they're soft and pliable. Drain and set aside.
  • In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken and cook until golden brown and fully cooked, about 5-7 minutes. Remove the chicken from the pan and set aside.
  • In the same skillet, add the beaten eggs, scrambling them until fully cooked. Once the eggs are cooked, add the soaked rice noodles, cooked chicken, bean sprouts, and chopped green onions to the pan.
  • In a small bowl, mix together the fish sauce, tamarind paste, sugar, and lime juice. Pour this sauce over the noodle mixture and stir-fry everything together for about 2-3 minutes until well combined and heated through.
  • Remove the pan from heat and serve the Chicken Pad Thai on plates. Top with crushed peanuts and fresh cilantro, and serve with lime wedges on the side for an extra burst of flavor.
