Cheesy Hamburger Rice Casserole

  • - ½ cup white onion finely chopped (or 1 medium green bell pepper and 1 medium tomato)
  • - 1 ½ cups shredded sharp cheddar cheese
  • - 2 ¼ cups low-sodium beef broth
  • - 2 tablespoons tomato paste
  • - 1 teaspoon onion powder
  • - 1 teaspoon garlic powder
  • - 1 teaspoon chili powder
  • - 1 teaspoon cumin
  • - 1 teaspoon oregano
  • - Salt and pepper to taste
  • - Nonstick spray for the baking dish
  • - Fresh parsley or sour cream for garnish optional

  • In a large skillet over medium-high heat, add a little oil and the ground beef along with the finely chopped onion (or bell pepper and tomato). Cook until the beef is browned and the onions are translucent.
  • Drain any excess grease from the skillet and season the beef with salt, pepper, and oregano to taste.
  • Stir in the uncooked rice, beef broth, tomato paste, and all the spices. Bring the mixture to a boil.
  • Once boiling, cover the skillet and reduce the heat to a simmer. Let it cook for about 20-25 minutes, or until the rice is tender and the liquid is mostly absorbed. During this time, it's crucial to ensure sufficient liquid for proper rice cooking.
  • Preheat your oven to 350 degrees Fahrenheit. Once the rice is cooked, pour the mixture into a 9x13 baking dish that has been sprayed with nonstick spray.
  • Bake the casserole in the preheated oven for 15 minutes. After that, remove it from the oven and sprinkle the shredded cheddar cheese on top. Let the residual heat melt the cheese.
  • Serve hot, garnished with fresh parsley or a dollop of sour cream if desired.
  • When making this casserole, feel free to get creative! You can substitute the ground beef with turkey or a meat alternative for a lighter option.
  • Additionally, if you prefer a spicier kick, consider adding diced jalapeños or a dash of hot sauce to the mix.
