Caramel Apple Oatmeal Bake

  • - 1 teaspoon cinnamon
  • - 1 teaspoon ground ginger
  • - 1 teaspoon apple pie spice
  • - 1-2 cups diced apples Honeycrisp or Fuji recommended
  • - 1/2 cup brown sugar or coconut sugar
  • - 2 eggs
  • - 1 cup milk or nut milk
  • - 1/4 cup coconut oil or avocado oil
  • - Caramel sauce homemade or store-bought

Instructions

  • Preheat your oven to 350 degrees Fahrenheit. Grease a baking pan (9x13 inches works well) with a little oil or cooking spray to prevent sticking.
  • In a large mixing bowl, combine the rolled oats, cinnamon, ground ginger, apple pie spice, and brown sugar. Stir until the dry ingredients are well mixed.
  • In a separate bowl, whisk together the eggs, milk, and coconut oil until fully combined. Pour the wet mixture into the bowl with the dry ingredients and mix until just combined.
  • Spread half of the oatmeal mixture evenly in the prepared baking pan. Drizzle a layer of caramel sauce over this layer, making sure to cover it well.
  • Top the caramel layer with the diced apples, then cover with the remaining oatmeal mixture. Drizzle a little more caramel sauce on top if desired.
  • Place the baking pan in the preheated oven and bake for 30-45 minutes, or until the top is golden brown and the oatmeal is set.
  • Once baked, remove from the oven and let cool for a few minutes before serving. Drizzle with additional caramel sauce if desired.
  • For the best results, be sure to let the oatmeal bake cool slightly before cutting it into squares. This will help it hold its shape better.
  • You can also experiment with different types of apples or add nuts and dried fruits for additional flavor and texture.
