  • In a large bowl, combine the olive oil, onion, garlic, paprika, cumin, coriander, cayenne pepper, salt, and pepper. Mix well to create a marinade.
  • Add the chicken thighs to the marinade, ensuring they're well-coated. Cover and refrigerate for at least 1 hour, or overnight for more flavor.
  • Preheat your oven to 375°F (190°C). Remove the chicken from the marinade and place it in a baking dish.
  • Pour the chicken broth over the chicken thighs, and cover the dish with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Then, remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and the skin is crispy.
  • Once cooked, remove from the oven and let it rest for a few minutes. Garnish with chopped cilantro and serve with lemon wedges on the side.
