  • 400 g spaghetti
  • 6 cloves garlic thinly sliced
  • 100 ml extra virgin olive oil
  • 1 teaspoon red chili flakes adjust to taste
  • Salt to taste
  • Fresh parsley chopped (for garnish)
  • Grated Parmesan cheese optional

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain the spaghetti and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until it becomes golden brown, taking care not to burn it.
  • Once the garlic is golden, add the red chili flakes and stir for about 30 seconds to release their flavor.
  • Add the drained spaghetti to the skillet and toss well to coat the pasta in the garlic oil mixture. If the pasta seems dry, add a little reserved pasta water to achieve your desired consistency.
  • Season with salt to taste and toss in the chopped parsley. Serve immediately, garnished with grated Parmesan cheese if desired.
  • For an extra touch of flavor, consider adding a squeeze of fresh lemon juice just before serving. Also, feel free to adjust the amount of chili flakes based on your spice preference.
