  • - 4 slices of bread your choice
  • - 1 cup shredded mozzarella cheese
  • - Butter for grilling

  • In a mixing bowl, combine the chopped spinach, cream cheese, sour cream, grated Parmesan, garlic powder, salt, and pepper. Mix until well combined and creamy.
  • Spread a generous layer of the spinach dip mixture on two slices of bread. Top each with a quarter cup of shredded mozzarella cheese. Place the remaining slices of bread on top to form two sandwiches.
  • Heat a non-stick skillet over medium heat and add a tablespoon of butter. Once melted, carefully place the sandwiches in the skillet.
  • Grill the sandwiches for about 3-4 minutes on one side, or until golden brown. Flip the sandwiches and add another tablespoon of butter to the skillet. Cook for an additional 3-4 minutes until the other side is also golden and the cheese is melted.
  • Remove the sandwiches from the skillet and let them sit for a minute before slicing. Serve warm and enjoy your Spinach Dip Grilled Cheese!
